Tried a new Eggsperiment this morning, kind of like Eggs Benedict, but healthier (maybe?) I like my “Easy Risers” (think Egg McMuffin) in the mornings, but trying to cut back on the carbs. This uses HALF of an English Muffin, so half the carbs per unit. Half of an English Muffin, two thin slices of cooked ham, one egg disc, a tomato slice, and a dollop of my homemade cheese sauce. Absolutely delicious! An “Egg Disc” - 1 large scrambled egg, a dash of salt, pepper, and garlic powder, and a couple teaspoons worth of diced green onion. Cooked slowly in an egg ring over medium-low heat so it doesn’t boil over the edges of the ring. Homemade cheese sauce consists of butter & flour to make a roux, then add 2 cups milk and stir until it starts to thicken. Add 8oz of cubed Velveeta cheese, and once that melts add 2 cups of shredded Old Cheddar.
A large bowl of celery and carrot sticks, and a smaller bowl with Ranch Dressing for dipping as needed.
Trying to eat healthier and reduce my carb intake. Tried an Eggsperiment for breakfast this morning (it was delicious!) and fixed myself a bowl of carrot and celery sticks for a snack (munching as I write this.)
